Rueben Casserole

I personally love Rueben sandwiches so when I came across this recipe I was very excited, first of all it uses my favorite sandwich ingredients, and it is a crock pot recipe! The perfect combo!

RUEBEN CASSEROLE

Ingredients:

• 1 can (16 ounces) sauerkraut, undrained
• 1 can (12 ounces) corned beef, sliced, or use leftover home-cooked sliced corned beef
• 2 cups Swiss cheese, shredded
• 1/2 cup mayonnaise
• 1/4 cup Thousand Island dressing
• 2 tablespoons melted butter
• 1/2 cup soft dark rye bread crumbs

Directions:

Place sauerkraut in the bottom of slow cooker. Top with a layer of the corned beef, then cheese. Combine both mayonnaise and dressing; spread over cheese. Cook on high 4 to 6 hours. Sauté bread crumbs in butter and sprinkle on casserole before serving.
